The Clay Pot Cover is used to enhance the flavor when preparing Dolma or Grape Leaves. Simply place on top of food when cooking.
When cooking the Dolmas, stuffed grape leaves, a heavy stone is placed in the cooking pot on top of the rolled up stuffed leaves as they boil, preventing the small, delicate wraps from coming apart. This is important unless you are making grape leaf stew.
The holes in the Dolma Lid allow the steam to escape while the handle provides an easy way to remove the stone when dinner is done cooking. The stone also acts as a “heat sink”, cooking the Dolmas from the top down.
